Finally! Here it is, the finished product!
This was my first time preparing Jack Fruit, so I know I will need a lot of practice. For my first time, though, it wasn’t bad!
I searched Google for recipes, and I couldn’t believe how many there were to choose from. I chose this recipe from The Edgy Veg because I LOVE Chipotle’s, the spicy Mango salsa was right up my alley, and there were a couple of great reviews.
The Jack Fruit (I used Upton’s Naturals Original) had marinated for about three-ish hours before I cooked it in my iron skillet. I probably need to work on my technique.
I made the Spicy Mango Salsa and used a whole Jalapeno because we like stuff hot. I would have used a Serrano pepper, but I was trying to stay as close to the recipe as possible.
Instead of cashews for the crema, so I used Tofutti “sour cream.” It works pretty well in most crema crems that I make 🙂
It wasn’t difficult at all. The only thing that was difficult was “the whole trying something new that I don’t know how to cook” thing.
The rice was made with my new favorite store bought salsa by Que Pasa. YUM! And the pinto beans were, well, beans with some spices. You can’t really go wrong with that combo.
My plan is to keep all of my reviews short, sweet and to the point. I have a very short attention span, and I have a feeling I am not alone out there.
In my personal opinion, this recipe was pretty good. While I Loved the salsa and crema combo, the Jack Fruit missed something for me. I can’t put my finger on it exactly. It wasn’t bad, but it wasn’t fabulous. Maybe I need to let it marinate longer? I think I might leave out the maple syrup next time. I prefer spice over sweet.
With that said, I think you should try it if you haven’t had the chance or you are too chicken like me! I believe that everyone should tweak recipes to their liking,styles and taste buds.
